I would suggest looking at MS certification programs, even if you don’t want to take the exams. I haven’t taken a Windows Server exam in a while, but looks like the latest one is Windows Server Hybrid Administrator Associate. You’ll also want to look into things like Active Directory, Group Policy, printing and print servers, and domains and domain controllers. As you mentioned, some networking can be handled Windows-side, like DHCP and DNS, but depending on the org, may be handled by other solutions.
As far as getting your hands on Windows Server software, you can download from MS, and it will have a 180 day trial before activation, which can be extended.

While not building bricks, you may want to look into Gunpla and/or 30 Minutes MIssions. 30MM in particular is a line designed to mix parts from different kits, and as a Lego and Gunpla fan, certainly scratches that itch like Bionicle did.

Definitely not a single-serving recipe, but my favorite is chili.
This was originally a recipe I found on chowhound, then modified it. I make this recipe in a 6qt slow cooker:
Brown chorizo and add to slow cooker. Brown ground beef and add to slow cooker. Dice onions and peppers, add to pan and let soften using the beef/chorizo fat, then add to slow cooker once beginning to caramelize. Puree or finely chop chipotle peppers and add to slow cooker. Add all canned items to slow cooker. Add garlic and spices to slow cooker. Stir to mix ingredients. Cook on low for 8 hrs or high for 4; 8 hrs is preferred, as chili benefits from longer cooking times for flavors to develop and meld.
Chili is a great recipe, now that we in the northern hemisphere are headed into winter. It’s also a great meal prep recipe, as 2nd day chili is better than 1st day IMO, it reheats well, and also freezes well.
Regardless of whether or not the tariff increases happen, Black Friday sales are going on right now, and depending on what stores are near you (namely Micro Center), you could find some good deals. Just make sure you check price history on anything you’re looking at (if you’re able) to ensure it’s actually a deal.
Maybe I’m weird, but I prefer the Joycons over any other Switch controller I’ve tried, including their Pro controller. It is SO NICE to be able to position my hands wherever I like, to the point where holding a standard controller basically feels like handcuffs. Even using my Xbox controller on pc feels bad in comparison. Also worth noting that 99%+ of my play time is docked.
Hard to say without knowing the conversations or what the recipients are like.
Personally, I try to keep texts to quick messages, as I’m not one for text conversations. If someone started throwing blocks of text at me, expecting me to keep up the conversation, I’d just call them. If they didn’t want to talk, then it probably wouldn’t be long before I just stopped reading the texts.
I think people are within their right to choose who they celebrate with, especially if the person in question isn’t someone they know. I don’t know how far apart everyone is, but would you be able to take off early and spend a few hrs with your friend?

Don’t skimp out on things that separate you from the ground. Shoes, chairs, beds, etc. Those things can affect your posture and bad ones can put you in pain, and you’ll likely be spending a lot of time in them, so it’s worthwhile to spend extra on quality ones. I’d say getting 4 years out of a pair of boots is a steal.
On the subject of boots, I bought a pair of Wolverine leather work boots for about $120 back in the early '00s, and wore them for 10+ years, albeit only during the colder months and casually. The only thing that wore out on them were the insoles.
